Gary Colpitts, a chef instructor at Manatee Technical Institute believes restaurateurs in this area would find breakfast a more successful venture. The simplicity of breakfast allows an operator to deliver a quality product without the bells and whistles of dinner service, Colpitts said. With the cost of linen napkins and tablecloths, fine glassware and fancy surroundings factored out of the equation, it's cheaper to not only start a breakfast-lunch operation, it's easier to maintain one, he said.
