Winter salads - Pittsburgh Tribune-Review
John Muth, general manager of The Cafe at the Frick, The Frick Art & Historical Center, Point Breeze, says that a "standard serving" of salad as far back as the 1960s used to be entirely cold ingredients. He credits nouvelle cuisine in France and visionary cooking lessons of Julia Child and California chef Alice Waters for bold new concepts that included introducing warm foods to salads, regardless of the season.
